In a deep saucepan put:
1 and 1/2 cups sugar
1/2 tsp salt
2 and 1/2 Tbsp cornstarch
1 Tbsp flour. Mix these together well to get any lumps out

3 cups whole milk
3 ounces unsweetened chocolate

3 beaten egg yolks
1 Tbsp butter
1 1/2 tsp vanilla

Meringue

Directions:
Directions:
Mix dry ingredients in deep heavy saucepan.
Slowly add the whole milk. Add the chocolate that you have cut up.
Stir constantly until all is blended well and comes to a boil. Boil one minute.
Slowly stir half this mixture into the 3 beaten egg yolks, then blend into the hot mixture in pan.
Boil one more minute.

Remove from heat and add the butter and vanilla. Stir well until butter all melted.

Pour into a prepared baked pie shell.

Either make a meringue with the egg whites beaten to peaks with 1/2 tsp cream of tarter and 1/2 cup sugar., Or cool the pie and use whipped cream topping when serving.

My sister Prudie used to make this pie all the time as a special dessert. It is dark and rich, very. soothing. Well worth the trouble.
