Cake -
2 Cups Sugar
1 + 3/4 Cups Flour
3/4 Cup Cocoa
2 Teaspoons Baking Soda
1 Teaspoon Baking Powder
1 Teaspoon Salt
1 Cup Strong Coffee (at room temperature)
1 Cup Buttermilk
1/2 Cup Oil
2 Large Eggs (at room temperature)
1 Teaspoon Vanilla

Directions:
Preheat oven to 350 degrees.

In a medium bowl, stir together all dry ingredients (1st 6 ingredients).
In another medium bowl, stir together all wet ingredients (last 5 ingredients).
Using an electric mixer, or by hand, gradually stir wet ingredients into dry ingredients.
Pour batter into pans.

This recipe works best in 2 - 9 inch pans (approx 30 minutes), 2 - 8 inch pans (approx 35 minutes), or 3 - 8 inch pans (approx 30 minutes). You can use a 9 x 13 inch pan, however, the outside edges will be overdone by the time the center firms up.

Cool cakes in pans for 10 minutes. Remove from pans and cool completely. Wrap in plastic wrap and let stand at room temperature overnight.
