1 cup vegetable or canola, oil
2 cups sugar
3 large eggs
2 1/2 cups pears, diced (I used canned and it was great)
1 cup chopped pecans
2 tsp vanilla
3 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg

Directions:
Directions:
Preheat oven to 350 degrees. Lightly grease two loaf pans.

In a large mixing bowl, combine oil, sugar and eggs. Whisk together well. Stir in pears, pecans and vanilla.

In a separate bowl, combine all dry ingredients. Slowly stir them into the pear mixture. Stir until just combined. Pour batter into prepared loaf pans.


Bake for 60 minutes or until toothpick comes out clean. Allow to cool in pans for 10 minutes before moving to a wire rack to cool completely.
