4 zucchini
1/2 lb Italian sausage (mild or hot)
1/2 lb ground round or ground chuck
1 T chopped parsley
1-2 cloves minced garlic
1/4 cup chopped onions
1 tsp Italian seasoning
1/4 cup Parmesan cheese
1 jar of spaghetti sauce

Directions:
Directions:
In boiling water, cook zucchini for 2-3 minutes. Drain. Cut in half lengthwise and scoop out inside to form shell and set aside. Brown Italian sausage and ground meat until crumbly. Drain off fat. Add parsley, garlic, onion, Italian seasoning, Parmesan cheese, inside of zucchini and 1/2 cup of spaghetti sauce. Fill zucchini and arrange in 13x9 inch pan, putting remainder of sauce in pan and bake in preheated oven at 350º for 35 minutes

Stuffed zucchini can be frozen on a cookie sheet first, then transferred to freezer bags.
