3 cups Peeled, Shredded Zucchini
1 clove Garlic, minced
2 T minced Parsley
1/4 cup Parmesan Cheese
2 Eggs
1/2 tsp Italian Seasoning
Dash of Pepper
2 cups Bisquick
Dash of Salt

Directions:
Directions:
Mix all ingredients. Drop by tablespoon into hot oil in skillet and fry until golden brown on both sides. Drain on paper towel.

The fritters can be frozen by placing on cookie sheet, then transfer to freezer bag.
