1 head cauliflower (about 2-1/4 lbs. trimmed and cut into bite-sized pieces)
3 cloves fresh garlic, peeled and thinly sliced
1/4 cup olive oil
2 tbsp. lemon juice
1/2 tsp. salt
1/4 tsp. black pepper
2 tbsp. grated Parmesan cheese

Directions:

Heat oven to 450º F.
Combine cauliflower and garlic in a large bowl.
Drizzle with olive oil, lemon juice, salt and pepper. Transfer and spread in a single layer to a large-rimmed baking sheet. Roast (oven set on Bake, not Broil) at 450 degrees for about 25 minutes, stirring once. Sprinkle with Parmesan cheese and serve immediately.
