1 cup white rice

1 cup sugar

1 tsp vanilla, and perhaps a dash more

1, 1/2 gallon 2% milk

Mix all together. Bring to a slow boil. Continue to simmer on a low boil for about 45 minutes to an hour or so. WATCH and STIR carefully. DO NOT WALK AWAY or it will truly boil over. This will thicken as it cooks. Rice will soften and you can smell the pudding as it cooks. Stir very frequently or it will burn and stick.

If the pudding becomes too thick, you can always add a little more milk after it's done. The talent of making rice pudding is just practice. As you stir, you will feel the thickening of the pudding and realize it is done!!

Delicious when warm. ENJOY......

Mama GIGI made rice pudding from the time Nancy, Ted, Phil and myself were young children. She made it frequently, especially when we spent the weekend with our grandfather and her. Our mom, sweet Nana, made this pudding constantly. I believe this is one recipe my whole family looks forward to at my home. I now lovingly share it and pay it forward to my children, nieces and all. :):):):)
