3 pounds clean, scrubbed new red potatoes
3-4 eggs
6-8 strips of bacon, cooked until crisp (cut in small pieces or crumbled)
1 cup onion, finely chopped
3 -4 scallions (green onions) chopped
3 stalks celery, finely chopped
1 Green/yellow/red pepper (your choice), chopped
1 + 1/2 cups mayonnaise
1 cup sour cream
salt & pepper to taste

Directions:
Directions:
1. Bring a large pot of salted water to a boil; add potatoes and cook until tender but still firm,
about 15 minutes. Drain and set in the refrigerator to cool.
2. Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately
remove from heat. Cover and let eggs stand in hot water for 10-12 minutes.
3.. Remove eggs from hot water and cool; peel and chop.
4, Cut the cooled potatoes into fourths, leaving the skin on.
5. Place potatoes in a large bowl.
6 Add the eggs, bacon, onion, celery and peppers, to the potatoes.
7. Combine mayonnaise and sour cream together and add to salad ingredients.
8. Add salt and pepper to taste.
8. Chill at least 1 hour before serving.
