1 pound white beans
10 c. water
1 ham bone (about 1 pd.)
1/2 c mashed potatoes
3 c. chopped celery
3 c. chopped onions
1/4 c. chopped parsley (optional)
1 clove garlic chopped
1 1/2 t salt

soak beans until swollen add ham bone, cover bring to boil and simmer 1 1/2 hours add remaining ingredients
Simmer 1 hr. longer. Remove meat from bone dice and return to soup
