3 Lemons and lemon zest
64 oz. Chicken Stock
8 oz. Orzo
3 Eggs

Directions:
Directions:
Cook the orzo and zest of 2 to 3 lemons in the chicken stock until the orzo is done.
Whip 3 eggs by hand until frothy, then add the juice of the 3 lemons to the frothy egg mixture...whip again.

Turn off the light under the chicken stock.

Remove approximately 1 cup of broth and VERY SLOWLY incorporate it into the egg mixture, stirring quickly as you do so.

Return the chicken broth/egg mixture VERY SLOWLY back into the soup, making sure you mix constantly while doing so.

Let soup rest for 5 to 10 minutes.
