Jerry's Mexican Lasagna Recipe

1 package ( 1 1/4 oz) Taco Seasoning Mix
1 1/2 pounds of Ground Beef
1 Teaspoon of Salt
1 cup of Fresh Diced Tomatoes or Canned Diced Tomatoes
2 8 ounce cans Tomato Sauce
1 4 ounce can Diced Green Chiles
8 ounces Ricotta Cheese or Cottage Cheese
2 Eggs
9 Corn Tortillas
10 ouncesShredded Jack Cheese

Step 1: Brown Ground beef in a large skillet, drain the fat.
Step 2: Add salt, taco mix, tomatoes, tomato sauce, and chiles.
Step 3: Blend well, Bring to a boil and reduce heat and simmer uncovered for 15 minutes
Step 4: In a small bowl combine ricotta, cheese and eggs.
Step 5: In bottom of 13x9 inch baking dish, spread half of the meat mixture. Top with half of tortillas and spread the ricotta cheese mixture over tortillas. Top with half of Shredded cheese.
Step 6: Repeat step 5 and cover once again with shredded cheese.
Step 7: Bake uncovered for 30 minutes at 350F
