1 pkg. chicken stuffing
2 c. chopped, cooked chicken
1 (9oz.) pkg. frozen chopped spinach, thawed
1/2 c. chopped, roasted red pepper
1 (10.25 oz.) can of cream of chicken soup
1 c. chicken broth
chopped onion to taste

Directions:
Preheat oven to 350 degrees. Prepare stuffing according to package. Stir in chicken. Squeeze water from the spinach. Add the spinach & onion. Roast pepper by frying in a little butter, browning the peppers. Add peppers, stirring well. Combine soup & broth in a medium bowl with a whisk. Stir soup mixture into stuffing mixture. Spray an 11"x7" pan. Pour the stuffing mixture into pan. Cover & bake 30 minutes. Uncover & bake for 20 minutes.

Can substitute chicken for turkey. Then you also substitute the chicken stuffing for the turkey stuffing.
