4 6 ounce Tilapia fillets
1/2 cup mayonnaise
2 eggs
2 tablespoons chopped dill (If using dried dill, cut the amount to 1 tablespoon)
1 tablespoon Dijon mustard
3/4 cup Panko bread crumbs
Olive oil

Directions:
Directions:
Season the tilapia with salt and pepper. Bake at 400º until cooked through, 10-12 minutes.
Let the tilapia cool, then flake.
Mix together:
Mayonnaise
Eggs
Dill
Mustard
Fold in the flaked fish and the Panko.
Form into about 8 cakes, chill for 30 minutes.
Cook in olive oil in a nonstick skillet until golden, 3-5 minutes per side.

Good served with salad.
