Lobster Stock 1 qt
Lobster Meat 2/4 lb (2 1.5 lb lobsters( the more the better ))
butter 4 oz
Onion 1/2 cup
Garlic "
Cream 1 pint
Carrot 1/2 cup
Celery "
mushrooms 1/2 cup

White Wine 1 1/2 cups (last time I made this I used pinot grigio)

You make lobster stock by collecting the remaining water when you steam the lobsters, so make sure there is enough water in the pot to establish a stock.

Ok, soup basics, melt butter and veg oil in a big pan (6 quarts, you won't make this much soup but it makes the mixing a whole lot easier).

Add garlic and let it get brown, then add the onions and other vegetables. Cook for 15 minutes. Ad 1/4 of lobster meat and wine

Add lobster stock. Cook for 1 hour or more.

Remove from heat.


Blend mixture with a submergible blender ( boat motor) or any blender you have.

Take a break and do next steps when it is close to when you want to serve up the soup.

Final steps

Chop up remaining lobster and toss into the soup.

add the cream.

Reheat the mixture and serve with garlic toast or Parisian loaf
