3 boneless, skinless chicken breast
1 quart canned black beans, rinsed and drained
1 quart canned tomatoes
1 pint corn
1 pkg. Ranch seasoning, or equivalent
2 - 3 tsp. cumin
1 tsp. chili powder
2 T. brown sugar, packed
6 oz. cream cheese

Directions:

Cut chicken into chunks and fry in coconut oil. Add all ingredients except cream cheese to pot and heat well. Add cream cheese. Simmer 10-20 minutes, stirring a few times to mix in cream cheese as it melts. This is also a good recipe for the crockpot. Great served with any type of Nacho or corn chips, or cornbread muffins.
