1 (28 ounce) cans crushed tomatoes
1/4 cup water
1/2 cup white sugar
1/2 cup distilled white vinegar
1 tbsp vegetable oil
1/2 medium white onion, minced
2 cloves garlic, minced
1 tsp salt
1/8 tsp celery salt
1/8 tsp mustard powder
1/4 tsp finely ground black pepper

Directions:

Sauté onion and​ garlic with oil until golden.
Add all other ingredients and simmer uncovered until desired thickness reached (about 40-50 minutes), stirring occasionally.

Use immersion blender or food processor to smooth ketchup, about 20 seconds.

Pour ketchup through fine strainer and press with the back of a spoon, straining out any remaining large impurities. (optional)

You can either can your creation for long-term storage, or let it cool and refrigerate to use right away. If doing the latter, store in a clean, air-tight container and use in about 3-4 weeks.
