2.5 cups 33% whipping cream
1.25 cup 3.25% milk
1 cup white sugar
2 egg yolks, lightly beaten
2 vanilla beans​, split lengthwise, seeds scraped out and all parts reserved

Directions:
Directions:
In medium saucepan, bring whipping cream, milk, sugar, reserved vanilla bean seeds, and vanilla bean pods just to a simmer. Stirring occasionally to dissolve the sugar.

In a small bowl, lightly beat the eggs and temper with hot mixture, then pour eggs into saucepan and return to low-medium heat stirring constantly with a whisk until thickened. About 5 minutes. (Do not allow mixture to go above 150º F or eggs will scramble).

Remove from heat, strain using a mesh strainer into a large bowl with a lid and chill in the fridge for 3 hours.

When mixture is chilled, use ice cream maker according to manufacturers directions then enjoy, or freeze for later use.

This was one of the first things i ever made from scratch, and i have since fallen in love with homemade ice cream. Pairs amazingly with apple crisp.
