1c milk
1/2c baking mix
1/2t salt
2 cans (4oz) whole green chilies
2c chopped tomatoes (2 or 3 med tom)
1/2c chopped onion
2c shredded cheddar cheese

Directions:
Directions:
Heat oven to 350º. Grease square baking dish, 8x8x2inches. Beat eggs, milk, baking mix and salt with hand beater until foamy. Remove seeds from chilies; rinse chilies with water. Place in dish. Sprinkle tomatoes and onion evenly over chilies. Pour egg mixture over vegetables. Sprinkle with cheese. Bake uncovered until egg mixture is set and cheese is melted, 40-45 minutes
