3 1/2c sifted flour
3 med eggs
2 egg shells of cold water
1T olive oil
pinch of salt

Directions:
Place 3 1/4c of flour on a board, make a well in it. Add eggs, water, olive oil and salt. Blend by rubbing mixture in palms of hands. Add remaining flour gradually, kneading until dough is very smooth. Let dough stand 1 hr divide dough into two sections. On a floured surface roll out to about 1/8inch thick. Bring long ends of dough together to meet at the center until 3 inches wide. With a sharp knife, cut dough crosswise into strips 1/4inch wide. Slip the dull edge of the knife under the center of the dough and toss the shreds apart. Cut to desired length. I cut mine about 2 1/2-3 inches long. Dry for 5 minutes on clean dry towel. If all the noodles are not used, let remaining noodles dry well before storing in a tightly closed container. To cook the noodles: Bring 8 qts water or broth to rapid boil, add noodles and cook for 10 minutes or until tender (test by tasting). If cooked in water, drain and serve with any desired sauce for pasta
