8 slices day old thin bread
1/2 lb. sharp cheddar cheese, sliced
4 eggs
2&1/2 c. milk
1/2 tsp. mustard
1 tsp. chopped onion
1&1/2 tsp. salt
dash of pepper

Directions:
Directions:
Trim crusts from 5 slices of bread, cut in half diagonally; use trimmings and remaining 3 slices untrimmed bread to cover bottom of 9" square pan. Top with cheese. Arrange 10 trimmed triangles of bread in two rows atop cheese. Beat eggs, blend milk, mustardn, onion, salt and pepper. Pour over bread and cheese, cover with waxed paper or plastic wrap; let stand at room temperature 1 hour or several hours in the refrigerator. Bake at 350 degrees 1 hour until inserted knife comes out clean.

*Ham, spam, bacon pieces or shrimp can be added before top with bread.
