1 Cup of Shortening
2 Cups of Sugar
4 Eggs
1 Teaspoon of Cinnamon
1 Teaspoon of Allspice
1 Teaspoon of Cloves
1 Teaspoon of Nutmeg
2 1/2 Cups of Flour
1/4 Teaspoon of Salt
1 Teaspoon of Baking Soda
2 Teaspoon of Vanilla
2 Cups of Delicious Apples (Diced to Pea Size)
1 1-Pound Box of Brown Sugar
1 Stick of Margarine
1 Cup of Whipping Cream
2 Cups of Chopped Walnuts (optional)

Pre-heat oven to 350 degrees. Grease and flour loaf pan or bundt cake pan. Cream together shortening and sugar with mixer. In a separate bowl, using a fork, beat each egg together. Add eggs to the creamed mixture. Add cinnamon, allspice, cloves, nutmeg, salt, and baking soda to the creamed mixture and mix well. Add flour 1/2 cup at a time, mixing well after each 1/2 cup until all 2 1/2 cups are added. Add vanilla and mix well. Add the apples to the batter, stirring to mix all ingredients. Add and mix walnuts to batter, if desired. Pour batter into the greased and floured loaf or bundt pan. Bake at 350 degrees for 35-40 minutes. Test to see if cake is done by sticking a toothpick or skewer into cake. If the toothpick or skewer comes out clean, cake is done. If not, cook for an additional 4-5 minutes and re-test. Allow cake to cool on wire rack. After cool, remove cake from pan onto a cake plate.

Cake is great without icing, but if icing is preferred, use the following directions.

Mix together brown sugar and whipping cream in a small saucepan. Cook on medium heat until you have a soft boil. Add margarine and vanilla, mixing until ingredients are combined. Remove from heat and cool. Beat mixture with mixer until the consistency to spread over the top of the cake.
