1 Egg beaten
3/4 C. Sugar
3 T. Butter
1/2 C. Milk
1/2 t. Salt
1/2 C. Vinegar
Thickening:
2 T. Cornstarch
1/2 C. Cold water

6-8 Medium Potatoes peeled, cooked and cut into cubed pieces
2 stalks celery stringed & chopped
1 small onion chopped
3 hard boiled eggs chopped

Directions:
Directions:
Peel potatoes, cut into cubed pieces, boil in salted water 20 minutes or until soft
Hard boil eggs

Beat 1 egg in a medium saucepan.
Add sugar, butter & milk and stir together.
Mix vinegar & salt together, add to mixture.
Cook over medium flame to a boil, add thickening & stir to the consistency of thick gravy, cool.

Pour over the potatoes, onions, celery & hard boiled eggs, stir to coat well.

May be served warm or cold.

Double recipe for large group.
