2 pounds of potatoes cut into cubes
1 (1 oz.) package of dry onion soup mix
1/3 cup extra-virgin olive oil
1 tbsp. fresh rosemary
salt and pepper to taste

Directions:
Directions:
Preheat oven to 400º. Line a baking sheet with foil. Lightly grease foil with butter or non-stick spray.
Place potatoes in a ziplock bag with olive oil. Shake to coat. Add salt and pepper, onion soup mix and rosemary and shake until evenly coated.
Transfer potatoes to lined baking sheet and bake for 20 to 25 minutes flipping half way through baking. Bake until crispy on both sides. Once potatoes are tender when pierced with a fork remove from oven.
