2 cups cornmeal
1 cup all purpose flour
1 teaspoon canola
1 1/4 cups warm water

Directions:
Directions:
1. In a large bowl, mix together the cornmeal and flour. Add the oil and 1/4 cup of the water and begin to knead with your hands.
2. Continue kneading while gradually adding the remaining 1 cup of water, until dough is formed, and the mixture no longer sticks to your hands. Allow the dough to rest at room temperature for 20 minutes.
3. Divide the dough into 10 equal pieces. Roll each piece into a ball, about the size of an egg.
4. Working on a floured surface, roll out each ball to about an 8 inch diameter circle.
5. Heat a frying pan on high heat and cook each tortilla on each side for 2-3 minutes, until brown spots appear. Cover immediately with a damp kitchen towel to keep tortilla from drying out.
6. Use immediately or store in an airtight container.
