1 lb Italian sausage (sweet or hot)
3/4 C chopped onion
2 slices of peppered bacon, sliced
2 tsp. garlic (garlic and salt to make a paste)
chicken stock concentrate
4 C water
2 potatoes cubed (1 bag of cooked, cube potatoes)
2 to 3 C kale, washed, stems removed and julienned
1/3 C heavy cream

Directions:
Directions:
In a large pot cook bacon to desired texture, add onion and cook until translucent. Add garlic, potatoes and kale. At the same time cook and brown the Italian sausage, when done add to the other ingredients. Add your chicken base and water bring to a simmer for 15 minutes. Add heavy cream, stir and serve with warm bread.

if making for large group double the recipe. Go ahead and use pancetta diced with the Italian sausage if you want. You can add different meats or veggies, make this your own.
