1 1/4 gluten free baking mix
1/2 cup packed light brown sugar
6 Tbsp. milk
3 Tbsp. butter, melted
2 tsp. vanilla
1 egg
1 1/2 cups blueberries
2 Tbsp. sugar

Directions:
Directions:
Preheat oven to 375
Place baking liners in muffin tin

1. In medium bowl, stir the baking mix and brown sugar with a whisk. Make a well in the center.
2. In a separate bowl, stir milk, butter, vanilla and egg with whisk until blended. Add to dry ingredients and stir just until moistened.
3. Fold in blueberries.
4. The dough will be stiff, more like a cookie dough. Spoon batter evenly into muffin cups.
5. Sprinkle with white sugar.

Bake 20 minutes
Let sit for 10 minutes before removing from pan
