1 ½ cups white sugar
1 ½ tsp salt
1 ½ tsp ground cinnamon
2 large egg whites
2 Tbsp water
2 lbs pecan halves (I buy them at Costco)

Directions:
Directions:
Preheat oven to 250 degrees.

Line two 18 x 13 baking sheets with parchment paper, Silpat, or aluminum foil.

Mix together sugar, salt, and cinnamon in a small bowl.

In a separate large mixing bowl, hand whisk the egg whites and water until frothy.

Add pecans to egg white mixture, and stir to coat the nuts evenly.

Gradually stir the sugar mixture into the pecans. Toss until well coated.

Spread ½ of the nut mixture on a baking sheet in a single layer and the other half on the 2nd baking sheet.

Bake at 250 degrees for 1 hour. Stir every 15 minutes.
Let them cool for about 30 minutes. Break apart nuts that are stuck together.

Candied pecans may be stored in an airtight container at room temperature for up to one week.

Freezing Instructions: Candied pecans will freeze well for up to 3 months in a freezer bag or airtight container, thaw to room temperature before serving.
