1 lb. ground beef
1 large egg
3 cloves fresh garlic or 1/2 tablespoon minced garlic (to your taste in garlic)
1 onion
1 green pepper
1/2 cup seasoned bread crumbs (more if needed for consistency)
2 cans tomato soup (plus one can of water)
Salt

Combine garlic, pepper and onion. I usually put in a food processor and puree them, that way the flavor is blended with the meat and no big pieces to eat. Salt and pepper to taste. The tomato soup makes it like gravy. I usually use 1 1/2 lbs. of meat to make enough for two nights, always tastes better the next night.

In a bowl mix ground beef and the rest of the ingredients, form into a loaf shape place in a deep baking dish, pour the 2 cans of tomato soup right out the the can over the meat and then add just one can of water. Stir it into the tomato soup around the meat loaf that is formed in the baking dish. You can periodically watch to see if a little more water is needed.

Cook 1 1/2 hours at 350 degrees UNCOVERED. Serve with mashed potatoes (real potatoes not boxed) and corn. YUMMMMMY! Enjoy.

This recipe is from a lady from our former church she was originally from Texas. She invited us over for dinner never liked meatloaf until I ate hers. And have been cooking it for my family ever since. It is just amazing. I hope you enjoy it as much as we do.
