4 T. unsalted butter
1 large clove minced garlic
2 limes juiced
1 T. Indonesian Sambal (preferably Sambal Oelek by Huy Fong)
Kosher salt & fresh ground pepper to taste
1 # large shrimp peeled & deveined
1 t. jalapeno seeded & chopped
2 T. chopped fresh cilantro

Directions:

In a small saucepan over low heat melt 1 T. butter, add garlic & saute 2 minutes
Add the remaining 3 T. butter, when melted add the lime juice, sambal sauce, salt & pepper
Turn off heat & allow sauce to rest.

Bring a large pot of well salted water to a boil. Add the shrimp and cook for 2 minutes or until shrimp are just firm and pink. DO NOT OVERCOOK! Drain

In a bowl toss the shrimp & sauce together, add the jalapeno & cilantro, toss again.

Serve with a good crusty bread to soak up the great sauce.

Pairs well with Jicama slaw.
