2 lbs. medium shrimp (can use frozen)
1/4 c. olive oil
1/2 tsp. crushed thyme leaves
1 bay leaf
2 small sliced onions
1 large peeled and sliced carrot
4 cloves of garlic
2 cups cider vinegar
3 c. water
1 green pepper sliced
1 red pepper sliced
1 tblsp. salt
1/4 tsp. pepper

Directions:
If not using frozen shrimp, cook and peel fresh shrimp. Place shrimp in large bowl. Heat oil in saucepan over medium heat. Add onions, carrot and garlic. Cook 3-4 minutes, tossing occasionally. Add remaining ingredients and bring to a boiling. Cook 10 minutes. Pour marinade over shrimp. Spoon into jars and seal. Refrigerate for 24 hours before serving.
