4 boneless chicken breasts
OR 6 small bone in chicken thighs

2-3 cups Panko bread crumbs
3-4 tbsp of fresh thyme
1 tsp basil
1/2 tsp oregano
1 tsp sea salt
1 tsp fresh ground black pepper
1/2 tsp cayenne (optional)
1/2 cup parmesan cheese (optional)
1 tsp paprika (optional)
2-3 eggs

Directions:

Preheat oven to 375 and position the rack in the middle

Prepare an assembly line on the kitchen counter including:

- 2 large bowls
- 1 9X12 baking pan

In the first large bowl, lightly scramble 2-3 eggs

In the second large bowl, mix all dry ingredients together (excluding chicken AND paprika)

Create the assembly starting with the egg bowl, dry ingredients bowl and baking pan next to each other.

Dip the chicken into the egg bowl until it's completely covered with egg, then drop it directly into the dry mixture. Flip the chicken multiple times so it is completely coated with the mixture. The initial egg layer will help to ensure it adheres to the chicken. You can do a small shake of the chicken to remove any loose dry mixture, but it's no biggie.

Finally. place the chicken in the baking pan. Repeat with all of the pieces of chicken. Sprinkle paprika across the laid out chicken for color and slight flavor (optional).

Bake for 35-45 minutes depending on the size of the chicken pieces. Check temperature of meat frequently.

This is a Nikole Grad special! My best friend introduced me to this recipe a few years ago and it was slightly different, but I adjusted it to my liking. This is our go to in the Grad Pool household when we have not done menu planning. It's delicious with a healthy green on the side, a big arugula salad, steamed broccoli, sweet potato, etc.
