1 red pepper, diced
1 green pepper, diced
1 medium yellow onion, chopped
1 TBSP olive oil
Salt, pepper, garlic powder seasoning to taste
12 large eggs
3/4 cup milk
2-3 links sausage (can substitute chicken sausage)
1/2 cup cheddar cheese

Directions:
Preheat skillet to medium to medium high heat. Add olive oil, red and green peppers, onion and seasonings to taste. Cook until peppers are slightly browned and onion is translucent. Remove from heat and cool in bowl. Lower temperature to medium heat. Add sausage to skillet and cook sausage. Remove and cool on cutting board. Pre-heat oven to 350 degrees. Whisk eggs and milk in a large mixing bowl. Prepare a pan by spraying with non-stick cooking spray. Spread cooked vegetables over bottom of pan. Cut cooked sausage into small pieces and scatter evenly over vegetables. Pour egg and milk mixture over vegetables and sausage. Top with cheese.
Cover pan with aluminum foil and bake at 350 for 40 minutes. After 40 minutes, remove foil and bake for another 15-20 minutes until casserole is golden brown and firm. Test with toothpick to ensure eggs are fully cooked.
