4 cups frozen shredded hash brown potatoes, thawed
1 pound bulk pork sausage, cooked and drained
1/2 pound bacon strips, cooked and crumbled
1 medium green pepper, chopped
1 green onion, chopped
2 cups (8 ounces) shredded cheddar cheese, divided
4 eggs
3 cups 2% milk
1 cup reduced-fat biscuit/baking mix
2 teaspoon salt

Directions:
Directions:
Combine hash brown potatoes, pork sausage, bacon strips, pepper and onion in a large bowl then stir in one cup of cheese. Put it in a 13x9 inch greased baking dish.
Whisk together baking mix, eggs and salt until the mixture is well blended then pour on top of the mixture before sprinkling the rest of the cheese. Refrigerate overnight.
Preheat the oven to 375F. While the oven is heating, remove the casserole from the refrigerator. Bake for 30 minutes or until a knife inserted comes out clean. Do not cover. Let the casserole stand for about 10 minutes before cutting.
