1 lb. codfish filets
1/4 cup butter, melted
1 1/2 tbsp. lemon juice
1/4 cup panko, breadcrumbs, or crumbled Ritz crackers
1/2 tsp. salt
1/8 tsp. white pepper
dash paprika or red pepper

Optional:
Old Bay Seasoning for additional flavor
dill; a favorite addition to any fish dish
parsley sprigs and lemon slices for garnish

Preheat oven to 350º.

If fish filets are large, cut into serving pieces. Mix butter and lemon juice together. Dip fish into butter mixture. Place fish in ungreased square 8x8x2" baking dish. Sprinkle dry crumb mixture over top of filets.

Pour remaining butter mixture over fish; sprinkle with paprika.

Cook uncovered until fish flakes easily with fork, 25-30 minutes. If you want a crispy top, broil for 5 minutes until crispy. Garnish with parsley sprigs and lemon slices if desired.
