Stuffed Mushrooms Recipe

18 Large Mushrooms
6 Strips of Bacon
2 Garlic Cloves
1/3 cup Onions, minced
1/3 cup Cashews, finely chopped
1 tsp Tarragon
2 cups Bread Crumbs from a specialty bread
1/3 cup Parmesan Cheese (extra for sprinkling on top of mushroom caps)
1/2 cup White Wine or Chicken Stock

Directions:
Directions:
Remove stems from each mushroom and finely chop the stems for the filling.
Dice bacon and fry until crisp on medium low heat, stirring occasionally.
Add finely chopped onion and garlic to frying pan and saute until the onion is clear.
Remove from heat and place mixture in a medium bowl.
Add mushroom stems, bread crumbs, cheese, nuts and tarragon to bacon, onion and garlic mixture.
Add wine or chicken stock to moisten ingredients.
Fill mushroom caps with the stuffing overflowing to the rim of the mushroom cap.
Top with extra parmesan cheese.
Broil for for about 10-12 minutes.
Serve immediately.
