6 cups zucchini, shredded or sliced
1 small onion chopped fine
1 cup sour cream
1 can cream of chicken soup
1 cup shredded carrots
1 stick margarine melted
1 box Stove Top stuffing mix
Directions:
Directions:
Boil zucchini and onion in salted water for 5 minutes. Drain. Add sour cream, soup and carrots. Mix the butter with the stuffing mix. Put half of the stuffing on the bottom of 9 x 13 pan. Cover with zucchini mixture and top with the rest of stuffing mixture. Bake 15-20 minutes at 350º.
