1 Box Carrot Cake Mix
3 Very ripe bananas
2 eggs
1 can crushed pineapple, drained, SAVE the Juice
Dab of oil (¼ cup or so)
1 tsp baking powder
Splash of vanilla
Nuts if you want

Directions:
Mix bananas, cake mix eggs, oil, baking powder and vanilla. Add the pineapple juice as you need to for consistency. Bake at 350 º till center is done. (toothpick test) Makes 3 small loafs. May not slice very well.
