3 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
1 cup chopped pecans
3/4 cup vegetable oil
2 cups sugar
2 tsp vanilla
3 cups grated unpeeled zucchini
3 eggs

Directions:
Directions:
Mix all dry ingredients together (except sugar).
Make a well in the middle of the dry ingredients.
Combine oil, eggs, sugar, vanilla. Stir in zucchini.
Add to dry mixture.

Grease and flour 3 loaf pans 8 1/2 x 4 1/2.
Cook at 350 for about 60 minutes.
Cool before removing from pan.
