Polenta Checkers:
1 tube precooked polenta
Mushroom Topping:
2 T olive oil
10-12 oz mixed mushrooms, including exotics, diced
1 small onion, chopped
3 T sherry
1 teas minced garlic
1 T fresh basil, chopped
1 T fresh parsley, chopped
Salt & pepper
Balsamic Drizzle:
1 T olive oil
1 clove garlic, minced
1 C balsamic vinegar
1 T dried thyme
Tomato Sauce Topping:
1 C prepared marinara sauce
Chopped parsley
Shredded mozzarella
Parmesan cheese

Slice the Polenta into 1/2-inch disks
Either grill the Polenta; or place the slices on a non-stick cookie sheet and bake @ 350º for 15 minutes
In the meantime, heat the olive oil in a medium sauce pan, and sauté the mushrooms and onions until soft.
Add the sherry, garlic, and seasonings, stirring occasionally for 10 minutes.

In a small pan, sauté the garlic in the olive oil until tan. Add the vinegar and thyme, and heat on low until the vinegar is thickened into a syrup.

Heat the tomato sauce, covered, in a small bowl in the microwave for 1-1/2 minutes.

Place the mushroom mixture on half of the polenta disks, and drizzle the balsamic syrup over the tops. Cover the other half of the polenta disks with the tomato sauce, and top them with the mozzarella and parmesan cheeses.

Arrange the disks like red and black checkers.
