3 T. Olive Oil
3 lb. ground meat (combo beef church, pork shoulder or veal shoulder)
Salt and pepper
6 cloves garlic chop
2 large onions chop
2 T. Tomato paste
6 T. Chile powder
12 oz dark beer
2 28 oz cans fire roasted tomatoes, crushed
2 c. Chicken stock
2 T. Red hot sauce
2 T. Green hot sauce
Toppings: crime fraiche, sliced jalapeños, cilantro, shredded cheese, sliced peppadews, chopped scallions, lime wedges.

Sauté meat, drain fat and set aside. Sauté veggies. Can use slow cooker
Add other ingredients and cook high for 3-4 hours
