1 T. Green cardamom pods
1 T. Cumin seeds
2 star anise
2 Ceylon cinnamon sticks, coarsest crushed
2 T. Whole nigella seeds
1 1/2 T. Yellow mustard seeds
2 dried Persian limes
1 1/2 T. Urea chile flakes
1 t. Ground mace

Directions:

Small sauté pan add cardamom, cumin, star anise, cinnamon sticks over medium heat.
Toast and stir constantly until fragrant, 2-3 min.
Transfer to spice grinder to cool.
To the pan, add nigella and mustard seeds and toast until fragrant 1-2 min.
Transfer toasted seeds and Persian limes to the spice grinder. Grind to a coarse powder.
Transfer to small bowl and mix in chile flakes and mace to incorporate.
Mix all. Store in cool dry place up to a year.
