"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
2 tbsp oil
1 to 1 1/2 lb ground beef
2 cloves garlic (chopped) or 2 tsps minced garlic in jar
1 tsp salt
1/2 tsp pepper
1/2 tsp oregano
1/2 tsp basil
2 8 oz cans tomato sauce ( don't use tomato paste because it will make it to sweet)
1 8 oz cottage cheese (small curd)
1 lg pkg Mozzarella cheese (grated)
1 8oz pkg lasagne noodles
1 small pkg grated Parmesan cheese

Directions:
Directions:
To oil, add beef and garlic. Cook until browned.
Add tomato sauce and seasoning
Cover and simmer for 15 minutes.
Cook noodles according to pkg instructions while sauce is cooking. May add 1 tbsp of oil to pasta water so noodles won't stick together. When done drain.
Spray 13x9 pan with Pam
Alternate layers of noodles, mozzarella, cottage cheese, Parmesan cheese, meat sauce and sprinkle mozzarella on top.
Bake at 375 degrees for 30 minutes.
Let rest about 5 minutes before serving so it will be easier to cut into squares.
This amount makes 1 13x9 pan; can be doubled easily to make 2 pans and one can be frozen and cooked another time.

Personal Notes:
Can be reheated (covered) in microwave and is just as good the 2nd and 3rd day, if you have any left. I serve mine with salad and garlic toast and some fruit and you have a gormet meal! Ha!
