1/2 tsp. salt
1 cup quick-cooking grits
1/2 cup freshly grated Parmesan Cheese
1/2 tsp. pepper
1 lb. medium size shrimp
1/4 tsp. pepper
1/8 tsp. salt
Cooking Spray
1 tblsp. olive oil
1 tblsp. flour
1 1/4 cups chicken broth
1/2 cup chopped green onions
2 minced garlic cloves
1 tblsp. fresh lemon juice
1/4 tsp, salt
1/4 tsp. hot sauce
2 cups firmly packedfresh baby spinach

Prepare Parmesan Grits: Bring 1/2 tsp. salt and 4 cups water to a boil. Gradually stir in grits. Cook over medium heat, stirring occasionally, 8 minutes. Whisk in cheese and pepper.

Prepare Creamy Shrimp Sauce: Peel, devein, sprinkle with pepper and 1/8 tsp. salt, shrimp. Cook in cooking spray 1-2 minutes on each side. (I use frozen cooked shrimp and heat to just hot.) Remove shrimp from skillet. Reduce heat to medium, add oil, whisk in flour. Cook 30 seconds. Whisk in broth and next 5 ingredients. Cook 2-3 minutes till thickened. Stir in shrimp and spinach. Cook 1 minute until spinach is wilted. Serve immediately over grits.
