1 roast with ribs attached
prime rib seasoning

Preheat oven to 400ºF

Let roast warm up to room temperature (this could take a couple of hours or more, but allows roast to cook evenly). Season the entire exterior of the roast with prime rib seasoning, place roast ribs down in a roasting pan with a rack.

Cook 8 minutes per pound at 400ºF then turn heat down to 200ºF and cook for 2 hours regardless of roast size. Use a meat thermometer. The temperature should read 110º for rare, 115º for medium-rare, 120º for medium, 125º for medium-well and 130º for well.

Let sit for 20 minutes prior to carving.
