2 1/2 pounds heirloom carrots, peeled (those little carrots with the green tops still on them)
2 1/4 cup orange juice
1/4 cup (1/2 stick) of butter or margarine
1/4 cup honey
3/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon chopped parsley

Directions:
Directions:
Place carrots in a large skillet with 2 cups of the orange juice and water to cover. Bring to a boil; reduce heat and simmer 5 minutes. Drain.

Add butter, honey, remaining orange juice, salt and pepper. Cook over medium heat, covered for 5 minutes, stirring occasionally, until carrots are tender and glazed.

Place carrots on a serving platter and drizzle with glaze from skillet. Sprinkle with parsley.
