2 T olive oil
1 onion, chopped
2 tsp garlic chopped
2 stalks celery, chopped
3 lbs ground beef or ground pork, or 1/2 and 1/2
2 T parsley (Italian freshly chopped)
1 T thyme (chopped fresh)
3 large eggs (slightly beaten)
2/3 C milk
2 C bread crumbs (Italian seasoned)
1 pkg onion soup mix (opt)
1/2-1/3 C ketchup for topping

Coat skillet with olive oil and heat over med heat. Add onion, garlic and celery and heat until onion is translucent ( approximately 5 min) set aside

Place beef and/or pork, parsley, thyme, eggs, bread crumbs, milk and salt and pepper in large bowl. Mix with hands. Then add onion/ garlic/ celery mixture. Mix well but gently to combine, not compact...

Preheat oven to 350º
Place piece of parchment paper on large sheet pan. Pat meat into a rectangle and then a cylinder down middle of pan... ketchup over top.
Bake 40-50 min. Check so not to burn. Remove from oven and rest for 10 min
