2 eggs separated
4 c milk scalded
1/2 c quick cooking tapioca
1/2 c granulated sugar
1/4 tsp salt
1 tsp vanilla

Directions:
Directions:
Mix egg yolks with small amount of milk. Add tapioca, sugar, salt and remaining milk. Cook in double boiler 10 to 12 min stirring frequently. Remove from heat. Do not over cook as it thickens when cooling. Beat egg whites until stiff but not dry. When mixture is slightly cooled fold in egg whites and vanilla. Chill. Serve plain or with whipped cream or any desired sauce. Chocolate or butterscotch sauce may be folded into tapioca.
