3 yellow or red onions (you can combine both)
12 Roma tomatoes
2 cups fresh cilantro (use 1/2 cup - 2 cups)
2-3 jalapenos
1 lime
Salt

Directions:
Directions:
Dice up equal parts of onions and tomatoes.
Roughly chop the cilantro
*our family does not like cilantro so I only use 1/2 cup)

Slice and deseed jalapenos and remove white membrane , finely mince

Combine with onions, tomatoes, cilantro.
Slice lemon in 1/2 and squeeze juice over, then sprinkle with salt.
Be sure to taste, add more salt, cilantro or jalapenos to taste.

Better if you allow the ingredients to mingle for a couple of hours.
