1c quinoa
1T olive oil
1/4c onion, minced (use a fresh onion, so much more flavor!)
1 clove garlic, mince
2 cans (15 oz each) black beans, rinsed and drained
1/4c cilantro, chopped
1/4tsp chili powder
Pinch of cayenne pepper (spicy)
1/4 c fresh lime juice
1c lettuce, shredded
Salt (to taste)

Topping Ingredients (Optional)

Grated cheddar or jack cheese
Sour cream or Greek yogurt
Pico de gallo or salsa
Tomatoes, diced
Hot sauce
Avocado, sliced
Guacamole
Corn

Directions:
Directions:
1) Pour quinoa into a saucepan along with 2 cups of water - bring the quinoa to a boil, then reduce heat to
a low simmer - cover the pot
2) Let the quinoa simmer for about 20 minutes till it becomes tender and all the liquid has been absorbed.
Keep a close eye to make sure the quinoa doesn’t burn
3) While quinoa is cooking, heat 1T of oil in another pan over medium heat - pour onion into the pan
and saute' for a few minutes till it softens and begins to turn brown - add the garlic and saute for 1-2
minutes more
4) Add the black beans to pan with 1/2c water, 2T cilantro, chili powder and cayenne pepper - bring to
a boil - reduce heat to medium low - let the beans simmer for 15 minutes till the liquid is mostly
evaporated
5) Stir in 2T lime juice - season with salt (to taste)
6) When the quinoa is cooked, remove from heat and fluff with a fork - use the fork to mix in 2T cilantro
and 2T lime juice - season with salt (to taste)
7) Assemble bowl with quinoa, lettuce, black beans, corn, and the rest of your desired toppings!
