1/2 c. unsalted butter (softened to room temp).
1/2 c. granulated sugar
1/2 c. packed brown sugar
1 large egg
1 t. vanilla
1 t. peppermint extract
1 c. flour
1/2 c. + 2 T. unsweetened cocoa powder
1 t. baking soda
2 t. espresso powder
1/8 t. salt
1 c. mini or regular semi-sweet chocolate chips
8 oz white chocolate
3 large candy canes (crushed)

Directions:
Directions:
In a large bowl beat butter until smooth and creamy. Add sugars and beat until fluffy. Beat in egg, vanilla and peppermint. Scrape down sides.

In separate bowl whisk flour, cocoa, soda, espresso and salt together. On low speed, slowly mix into the wet ingredients. Cover dough and chill for at least three hour or up to three days.

When ready remove from refrigerator and allow to sit at room temperature for 20 minutes. Preheat oven at 350º and line large baking sheets with parchment.

Scoop and roll balls of dough and place on cookie sheet. Bake for 8-9 minutes.

Melt white chocolate in double boiler. Dip cookie 1/2 way into cookie. Place on cookie sheet and sprinkle with candy cane.
